Obviously, I should be prepping and serving more plants, just can’t quite get there yet. We did make Coconut Braised Chickpeas with Spinach and Sun-Dried Tomatoes kind of thing, it was okay, yet I was more interested in getting my hands on some Twizzlers, we went to see Little Women after dinner.
One of my favorite cookbook authors, Ina Garten, wrote a great recipe for Straw & Hay with Gorgonzola in Foolproof, and I did a little riff on that the other night, super easy and good comfort food. I adjusted the recipe up a little and used a whole box of pasta, the entire bag of frozen peas, and increased the sliced prosciutto, I like to have leftovers to serve for lunch the next day. With a simple escarole salad dinner was done.

It’s January, a warmed plate of pasta and an oversized v neck cashmere sweater feel right about now.
